In Piedmont, as in many other regions of Italy, everything revolves around gastronomy. The region is known for its rich variety of cheeses, cured meats, pastas, hazelnuts, chestnuts, and truffles.

Famous appetizers include vitello tonnato (thin slices of veal covered in tuna sauce), carne cruda (steak tartare), and peperoni con bagna cauda (grilled peppers with a garlic and anchovy sauce).

Piedmont is also renowned for its agnolotti al plin (a type of stuffed pasta) and risotto, with expansive rice fields around Vercelli. Tajarin pasta and gnocchi are often served with rich sauces, such as those made from porcini mushrooms or wild boar.

For main courses, brasato al Barbera, slow-cooked beef, plays a central role.

Piemontesi have a sweet tooth, with desserts like bunet, zabaione, and panna cotta with hazelnuts, an important ingredient from the region.

The white truffle, Tartufo Bianco, receives special attention in the autumn, especially during the truffle market in Alba. This delicacy is an essential flavor enhancer in many dishes.
